::Sunday Breakfast Casserole::

Did I ever mention that breakfast is my favorite meal of the day? I eat breakfast pretty much every morning. It's nothing fancy; normally toast and fruit. However, I love 'breakfast' foods; pancakes, french toast, caramel or cinnamon rolls, you name it, call it breakfast and I love it. Egg bake, which is what this casserole pretty much is, is something that my grandma makes alot of times when we stay at her house. This isn't her recipe, but when I was looking through a cookbook (Braddock 125th) I came upon this recipe and thought it sounded fabulous. It was tastey and i'm sure no where near healthy. Is a recipe that calls for a dozen eggs ever healthy?! But anyways, moderation, right? This recipe is easy to make and makes the house smell like all kinds of wonderful. Enjoy!


I had this in the freezer so this is what I used for the meat.

The recipe calls for 1/2 cup of green peppers but I used a cup of a mixture of these.

Once again, my favorite baking dish! Some where in the future maybe i'll have enough followers to give away something like this?!

On a side note, I was going through the fridge and realized in the past couples days I have bought 5 pkgs cream cheese and tons of cream! I better get on to baking something!

I used mexican and cheddar cheese.


The recipe says to brown the ^above^...but just saute until tender.

Then add the meat...or tofu. hahahhaha


back to the cheese...I used a heaping cup full in the mixture.


I also added a couple shakes of the ^above^




I also didn't let the hash brown unthaw and added them to the egg mixture right away.

All done! For me, at 40minutes it wasn't done, so I baked for about another 15 minutes. It will be done when it doesn't "jiggle" when you shake the pan.

Eat with a little ketchup.
or
Melt a little velveeta and hot sauce and serve. (since i went with the Jimmy Dean 'HOT' sausage type)

::Egg:Cheese:Croissant:Grilled Sandwich::

As a RN I am suppose to be promoting health & wellness. This recipe doesn't quite do that; but I am suppose to help people be happy right? Well, this make your hunger be all sorts of happy! I got out our griddle that we got as a shower gift (we ended up getting about 10 total..so this is the one lucky one we kept) to fry the eggs on and then fry the insides of the croissants to make them warm and add a little crunchy goodness; it worked! This is an easy "recipe," as there is no mix of ingredients, etc. Enjoy!

Egg:Cheese:Croissant:Grilled Sandwich
Eggs
Cheese
Croissants
Butter
Salt & Pepper to taste
Using a griddle, fry eggs until done (I make the yokes hard with these sandwiches & add salt and pepper while fryings), add a slice of cheese and leave on until melted. On an open side on the griddle, butter the griddle and place sliced croissants open face down to brown. Place egg and cheese on croissant and serve.
Variations: There can be many different ways to make these; fry peppers and onions to make it southwestern style; fry up ham, bacon or whatever meant you choose. Try other ingredients that appeal to you!
I buy the croissants at Sam's Club. For a dozen they are a little over $5. They are very moist!

Sliced cheese. I always buy the big brick of sliced cheese and then divide it into little packages and put the rest in the freezer. The slices are a little bigger than the regular cheese slices you buy and they have a better taste.

Croissants are very buttery and flakey; when warmed up and "fried" a little on the griddle it makes them so good!
