::Sunday Breakfast Casserole::

Did I ever mention that breakfast is my favorite meal of the day? I eat breakfast pretty much every morning. It's nothing fancy; normally toast and fruit. However, I love 'breakfast' foods; pancakes, french toast, caramel or cinnamon rolls, you name it, call it breakfast and I love it. Egg bake, which is what this casserole pretty much is, is something that my grandma makes alot of times when we stay at her house. This isn't her recipe, but when I was looking through a cookbook (Braddock 125th) I came upon this recipe and thought it sounded fabulous. It was tastey and i'm sure no where near healthy. Is a recipe that calls for a dozen eggs ever healthy?! But anyways, moderation, right? This recipe is easy to make and makes the house smell like all kinds of wonderful. Enjoy!


I had this in the freezer so this is what I used for the meat.

The recipe calls for 1/2 cup of green peppers but I used a cup of a mixture of these.

Once again, my favorite baking dish! Some where in the future maybe i'll have enough followers to give away something like this?!

Milk.
On a side note, I was going through the fridge and realized in the past couples days I have bought 5 pkgs cream cheese and tons of cream! I better get on to baking something!

I used mexican and cheddar cheese.


The recipe says to brown the ^above^...but just saute until tender.

Then add the meat...or tofu. hahahhaha


back to the cheese...I used a heaping cup full in the mixture.


I also added a couple shakes of the ^above^




I also didn't let the hash brown unthaw and added them to the egg mixture right away.

All done! For me, at 40minutes it wasn't done, so I baked for about another 15 minutes. It will be done when it doesn't "jiggle" when you shake the pan.

Eat with a little ketchup.
or
Melt a little velveeta and hot sauce and serve. (since i went with the Jimmy Dean 'HOT' sausage type)
